Principles.
What separates man from animals is the ability to discern right from wrong. There is a clear dividing line in people’s actions between right and wrong. The extent of this division culminates in the difference between good and evil. Humanity and the earth will eventually pass away, but goodness as a principle endures forever and shines like light through the darkness. There will always be a separation between right and wrong, and good and evil, based on principles.
Principles define who you are as a person.

If one thinks of the story of Eden and the “Tree of Knowledge” which bears the fruit of the knowledge of good and evil it fits in well with your distinction between man and animal. But the Bible story probably goes much deeper in actually saying “experience” of good and evil.
A “clear” dividing line between right and wrong, black and white? Not so sure about that though.
For me “sin” and “evil” are defined as disobedience to God.
