Sausages Here, Sausages There

Nowadays, sausages and other processed foods are allegedly the devil’s work. Extremely bad for the body. But who can easily give up a lovely sticky, slow-cooked pork sausage? Not I. Especially if you’ve ever read Nigel Slater’s description of the joys of a sausage sandwich. Nothing else will do. It is fortunate then, that supernatural helper, YouTube, and a Food Processor have come to the rescue for making less-bad-for-you, and more economical, sausage. This weekend, I had a go at making homemade sausages. Not links, that’s a mess you don’t want to get into. These are sliced sausages in the round and once I get the seasoning right, they’ll be fabulous. Take two pork shoulder chops, cube them into the food processor, add salt, pepper, nutmeg and herbs to taste. Blitz, shape the resulting sausage mix into small, round patties. Scramble up some eggs and Yeeha! A real cowboy breakfast. (For a real Texan cowboy breakfast, blitz in some chilli flakes. Texans sprinkle chilli flakes on their fried eggs. Who says blogging isn’t edifying).
A good few years ago, I went to an outdoor theatre performance of ‘Pinocchio’. There is a point where a puppeteer, Mangiafuoco, who has captured Pinocchio, gets angry at him and decides to chop him up for firewood, so he can cook a string of sausages. While waving his string of sausages and chopping knife in a threatening manner, the puppeteer sang the funniest song ever. To the tune of "Largo al factotum" from ‘The Barber of Seville’, (the Figaro, Figaro, Figaro song), the lyrics were ‘Sausages here, sausages there, sausages, sausages, sausages, sausages, sausages, sausages, saus-AH-ges. You had to be there. Unless you have a try. Which I do, especially while blitzing pork shoulder chops into sausages. Those long winter nights will just fly in.
