What's In A Name?

is very delicious
and quite unique.
The fish, rightly,
achieved fame
but what inspired
the dish's name?
Was it a lady
with a physique
that could be said
to be magnifique?
Or a girl gangster
holding a Beretta?
No, it was named
after an operetta.

Well! I've heard of Pavlova the dessert, named after the Russian ballerina Anna Pavlova, so why not a dish named after an operetta.

Never heard of a "Sole Veronique" must be an italian dish, give me a seafood platter and candle light any time. And who was "Escoffier" , "Mademoiselle" ?
Shouldn't have bothered with the "typo with physique" this is more for fun than great academic works of literature, who cares?
